A Keto version of the legendary Gordon Ramsay recipe If it isn’t obvious already, I love to eat good food and I enjoy cooking good food too. Over the years many chefs have inspired me and one of those has been Gordon Ramsay. While he might be famous more for his cursing, he’s not one of the best chefs in the world for nothing. His pork chops with sweet and sour peppers is the stuff of legends. This recipe is extremely simple, it’s literally just a few ingredients of top quality, treated perfectly for maximum flavour. I hope I’ve done Gordon proud and I hope you folks enjoy this recipe. A whole lot of porky goodness Since I didn’t get the perfect bone in pork chops, I filleted mine and cooked up just the eye or the loin part of it. I plan to use the bones to make a stock and at the end I cooked up the other meat trimmings for a tasty snack. Couple of tips to keep in mind is to cut the fat side of the pork chop with the knife so it doesn’t curl up when cooking and it cooks more evenly. Also once […]

Cauliflower is the new potato As a glorified home cook (not a chef) I can safely say that potato is one of the most versatile foods on the planet. You can mash it, fry it, sautee it, boil it, bake it etc, you get the idea. What has potato got to do with Keto? It’s off the menu. Well I’m here to say Cauliflower is the new Potato. It’s not a food I ate much off in my life, in fact I think I quite disliked it. Fast forward to 2015 when I started my Keto journey and cauliflower became my saviour. I think there is nothing more versatile than cauliflower. I’ve made a cauliflower pizza, used it to replace mashed potatoes in Shepherd’s pie and even turned it into cauliflower upma. Safe to say, it’s the new potato. But what’s that got to do with hummus? Well cauliflower is the perfect replacement for chick peas to make an incredible keto hummus, or cauliflower hummus. Setting up and using Myfitnesspal It’s pretty simple to set up and use the MFP app or website to log your calories and macros. The first thing you need is a kitchen or a food scale. Then all it takes is signing up on the website and watching my video on how to set up your account and start logging the food you eat. I might have inflated some figures regarding a hamburger at the Hard Rock Cafe but you will get the idea. I personally think that logging your calories and macros will help you with your Keto weight loss and help you be more aware of the food you eat and what the macros are like. Good luck! Net carbs and browser extensions On keto we like to count ‘net carbs’ and not total carbs. Our body doesn’t really process fiber (which is a part of total carbs) and hence when we subtract the fiber from the total carbs we get ‘net carbs’. A crowd pleasing appetizer and great keto snack When I first made my keto bread crumbs, one of the dishes I cooked up were these fish cakes. They were an instant hit with my wife, Deepti and she insisted that I make them on the show. Of course being my usual self I got distracted and forgot about them. My local fish monger recently showed up with some delicious fillets of a fish called ‘Kapi’. I still have no idea what fish it actually is, I just know the local name and I know that it’s a flaky white fish, it’s almost like salmon. So for this recipe you can pretty much use any fish that you like, I’d recommend a nice flaky white fish. I think salmon would work well as might a cod or haddock and I think you might even enjoy this recipe with canned tuna. Not Fish? What else can we use? This recipe is great to make a spicy crab cake as well but if you want a more traditional American style recipe, try my original crab cakes, you can replace the regular breadcrumbs with our keto bread crumbs now. A Japanese Omelet Rice Dish If you are a food lover you’ve probably seen the Omurice video that has been doing the rounds on social media. It’s absolutely mesmerizing how chef Moto Kichi makes that omelet which goes over the fried rice and when he cuts it then it just oozes over the rice and he pours gravy over it all. It’s probably taken years of practice to perfect the art of making Omurice the way chef Moto Kichi makes it, so for all us home cooks there is an easier way. Watch the video and find out. Tomato Ketchup Fried Rice Wait what? Tomato Ketchup in a fried rice? Yes indeed. So Omurice is a ‘western’ style Japanese dish, I mistakenly said ‘American’ in the video. The fried rice is basically tomato flavoured and is made originally using ketchup. Since most ketchup has tons of sugar in it we’re going to make ours Keto friendly by using puree and seasoning it with garlic, soya sauce, vinegar and everything else that goes into the fried rice. From Keto meat balls to Keto meat sauce My previous recipe was a delicious Keto Spaghetti and Meat balls recipe where I used ground beef and ground pork as my choice of protein for the meat balls. Since I purchased 1/2 kg packets and I used half of each meat, I had some left over. I also had some of those canned tomatoes. It was like the ingredients aligned and I knew I had to create the ultimate Keto Meat Sauce/Bolognese/Ragu. I watched a bunch of videos and figured out the subtle differences between a Bolognese and a Ragu. They come from different parts of Italy, one uses white wine, the other red and they are eaten with different kinds of pasta. After much consideration I realized that the Keto version of both these incredible Italian sauces would be pretty much the same. So give it a try, it’s great to cook in a big batch as it freezes really well. You can use it in many ways, perhaps just poured over some zucchini noodles or cauliflower rice, maybe make a lasagna with it or maybe just substitute it for the marinara sauce in my eggplant Parmesan or eggplant involtini […]

Inspired by a Tasty Video I made this savoury meat cake I’ve been feeling a bit overwhelmed with work recently, I’ve got a brand new album I’m working on and I’ve got this really interesting project (which I can’t reveal) that has me rather busy and so I haven’t uploaded a new recipe in a few days and I was feeling the pressure to get a video done. A friend of mine posted this Tasty video on my Facebook timeline and it inspired me to make a keto version. The original recipe had a stuffing with corn and there was breadcrumbs in the mince, this mostly from what I could make out since the video is in Portuguese. So for my Keto version I decided to build it up with some delicious sauteed spinach, mushrooms, olives and spring onions. I also decided to go with a different set of seasoning for the mince using paprika, cayenne, black pepper and a blend of dried herbs called ‘Italian Seasoning’. Bringing back the comfort into Keto food Chicken Parmesan is a staple and a comfort food for many people. In my earlier videos I’ve shown you how to make my Keto marinara sauce as well as Keto bread crumbs. Putting these two together you can definitely whip up something close to the original. My plan however was to reinvent it a bit and also make an easy, meal for one style dish that didn’t require you to make bread crumbs and have the marinara sauce lying around. This is something you can whip up in about 15-20 minutes with just a few simple ingredients lying around. Reinventing the classic Chicken Parmesan So for my version of Keto Chicken Parmesan I decided to use fresh parsley and Parmesan cheese to create a ‘Keto bread crumb’. I also decided to create a tomato sauce in the same pan in about 5-6 minutes. The sauce itself is packed full of flavour and is pretty low on carbs since it’s just tomatoes with some garlic and dried seasoning and of course fresh basil to finish with. Where squid and spaghetti unite I’ve got the ultimate low carb/keto spaghetti and meatballs and it doesn’t involve a zucchini and a spiralizer. We’re making squoodles or squaghetti which are basically noodles/spaghetti made using squid. I first made something similar and got the idea for it from my pesto calamari recipe and realized it would work great in this recipe as well. I decided to make a nice small 2 person serving of this recipe and made a nice thick reduced tomato sauce so that it would adhere to the squoodles and also I cooked the squid in the tomato sauce so that all the flavours meld into each other. Everything is cooked in the same pan so it’s really a one pot dish. Anyway enough jibber jabber, enjoy the video. The details are in the cooking Let’s talk about the meatballs first. I used 50% pork and 50% beef for my recipe, you can use pretty much any meat you like including chicken or ground turkey, just remember cooking time varies for each meat.
